康定牦牛肉 \ Kangding Yak Meat

   康定的牦牛肉极为著名,因康定的3500米以上地区生长着许多野生药种如贝母,虫草等,耗牛常食这些药材,所以其肉鲜美无比。红烧,清炖或凉晒制成牛肉美食更是风味独特,是到康定必吃的美味。

Kangding yak meat is very famous, because yak often eat wild herbs which growing in more than 3500 meters area, so yak meat is very delicious and with a special flavor.

高原蕨菜 \ Highland Fiddlehead Fern


    康定的高原蕨菜是蕨菜中之精品。其营养丰富,维生素含量是一般蔬菜的数倍,并具有清热、减脂、化痰、降压和促进细胞更生等药用功效,将其与肉类红烧、清炖或者凉拌,营养丰富、味道鲜美、口感爽脆。

The highland fiddle head fern has a reputation as the king of mountain dishes. This is not only good for nutrition, but also rich in vitamin and carries medical efficacy. And those can be cooking in different ways: hot and cold, all of dish looks nice and tastes delicious.

高原野生菌 \ Highland Wild Mushroom


   康定的野生菌是高原的特产之一, 既有纯天然风味,又有药效功能,吃起来香甜可口。康定的松茸菌、獐子菌、鹅蛋菌、青菌、牦牛菌等种类繁多,做法更是多样,可以炒也可以烧,不同的做法都能把菌子的功效体现出来。无论是康定人还是外地人,都对野生菌情有独钟。

The wild mushroom is specialty food of the plateau, which growing in pure natural environment, combines the effect of medicines and taste delicious as well. There are as many versions of dishes as there are cooks. Both Kangding people and travelers are fond of wild mushroom.

特色小吃 | Special Snakes




康定凉粉 \ Kangding Bean Jelly


康定特色白豌豆精制而成,形状跟成都的甜水面有些相似的康定凉粉也必须要来一碗。藏餐豪爽扎实,多吃几顿,外地游客免不了会觉得有些负担,这时候来一碗清爽的凉粉。口感顺滑,鲜辣可口,真是恨不得每餐都来一份。

This jelly is made of white pea and seemed like Chengdu Tianshuimian. Tibetan meal is generous, so tourists will inevitably be tired. And a bowl of fresh bean jelly will make them feel better.

温泉鸡蛋 \ Hot Spring Eggs


康定木格措景区里有着不错的温泉资源,微量元素含量丰富,非常有利于健康。康定温泉还能给游客提供一道美食——温泉鸡蛋。将鸡蛋浸于温泉中,稍等片刻,便可食用。稍稍磕开一个小口,半熟的鸡蛋带着一丝生甜缓缓流入口中。

Kangding has good hot spring, which is rich in trace elements. Moreover, it can help people to cook a delicious food--hot spring eggs. Put eggs in spring, and wait a moment, all done. The soft-boiled egg has special sweet taste.

康定锅盔 \ Kangding Guokui


锅盔是四川省各市州很常见的一种特色传统小吃,但是锅盔在康定则别具风格。康定的锅盔有各种口味和大小。蛋奶、香甜、椒盐、方的、圆的等等,各式各样,又软又香。康定人民多将锅盔与酥油茶作为早餐,简单营养。只是每天早上选择不同种类的锅盔都能吃一周不重样。

Guokui is normal food in Sichuan, but Kangding’s is special, which has various tastes and sizes, such as sweet, egg-milk, salty and square, circular. Kangding people always take it as breakfast with buttered tea, which is simple but nourishing.

牦牛肉盖被 \ Yak Meat Gaibei


牦牛肉盖被是口感更加丰富的一道佳肴。传统做法是将牦牛肉和土豆烘烤后切块,配以辣椒大葱等配料,最后在上面盖上荞麦面皮。吃的时候,皮卷着肉,然后再在辣椒酱里一裹。碳水、高蛋白和窜头的辛辣,各种口感在嘴中爆开。旅途的辛劳一下子被逼到无路可退,慢慢消失了。

The traditional cooking way is cut baked yak meat and potato into pieces and served with ingredients, like chili and scallions, and finally put buckwheat cake on them. When people eat this dish, they always dip cake and meat in the spicy sauce. The compound taste will help people remove fatigue.

人参果饭 \ Ginseng Fruit Rice


    人参果——藏语谓之“青梅日布”,意为长生不老之果。含丰富的糖、蛋白质、氨基酸及多种维生素,具有生津润肺,提神滋补之特效。人参果饭也叫“卓玛折丝”。被藏族同胞视为一种吉祥的食物,只在婚礼、节日食之,以之待客,视为尊贵之意。

Ginseng Fruit means live forever with out getting old. It's containing sugar, protein, amino acid and multivitamin. Ginsengfruit rice becomes a kind of food implying the auspicious for Tibetan, which used to express respect to their guests.

牦牛酸奶 \ Kangding Yogurt


康定酸奶与我们吃的普通酸奶不同,原料是牦牛奶。口感更是带着藏区豪爽的特点,奶香浓郁、又稠又酸。大多餐厅都会在酸奶上面放上鲜果和大量的葡萄干等来中和其酸味,让它更符合外地游客的口味。

Kangding yogurt is made of yak milk and more dense and sour then normal yogurt. Thus many local restaurants would sell it with fruit and raisin, even white sugar, which can help it be more popular in tourist.

康定雪茶 \ Kangding Snow Tea


    康定有被誉为珍品的雪茶分为青雪茶(红雪茶)、白雪茶两种,藏语称之为“夏软”,纳西话里叫做“阁楞”意为“岩石上的茶”。由于是天然野生,不能人工栽培,十分的稀少。雪茶清纯爽口,其味略苦而甘,是难得的保健饮品。平肝降压、清肺止咳、生津止渴、醒脑安神、明目等功效;对高血压、神经衰弱、肺热、咳嗽、阴虚潮热、中暑等有奇效。

There are two kinds of snow tea-red snow tea and white snow tea; there are also called “Xiaruan” in Tibetan. Snow tea is a very rare natural wild plant and has many beneficial efficacies, such as bring high blood pressure down, soothe the nerves and relieve a cough etc. It is considered the world's treasure.
